Marination -
Take the chicken and wash it properly before adding salt, white pepper, ginger garlic paste, chilli paste & cream.
-
Add lemon juice and use a fork to poke the chicken pieces so that it is covered with marination very nicely.
-
Leave in the refrigerator over night or in case you're in a hurry, give it minimum half an hour marination time.
Cooking -
Grill the marinated chicken pieces and shred them into smaller pieces.
-
Heat the coal piece well and separately heat some oil.
-
In a steel bowl put 2 pieces of clove and 2 sticks of cardamom and place the bowl. Put this bowl in a deep dish and put the chicken all around it.
-
Place the burning hot coal in the bowl and carefully add the heated oil on the top. Let it smoke for a few seconds and cover the dish with an air tight lid.
-
In case your deep dish doesn't have a lid, cover it using a steel plate and cover the plate with a wet cloth or simply use some dough to seal the cover so that the smoke stays in.
-
Finely chop the vegetables longitudinally.
-
After about 5 - 7 minutes, remove the lid from the dish and you'll have the smoked chicken ready.
-
Add the vegetables to the chicken and mix well. Add thousand island sauce, salt and pepper. Mix well.
-
Tear lettuce leaves by hand, add to the chicken and mix well. Chill the dish to serve as a salad. OR spread mayonnaise on the bread and use the mixture as a sandwich filling topped with lettuce.
Recipe notes
You can serve it as a salad or Sandwich or simply create your own dish. Experiment a little to create your own masterpiece.
