Take a large bowl and break the eggs in
Whisk them well, almost frothy
Then add the milk and cheese and whisk again.
Add coarsely ground black pepper and salt to taste
In a pan, take a dollop of butter whilst keeping the heat on low
Add the egg mixture and spread it all in
Immediately take a spatula and start cooking the eggs in
The low heat will cook the eggs evenly, and you may cook them to the consistency you like.
I like mine soft from inside and firm outside..
Serve with toast
