      This is one of the first cakes I made and I actually liked it a lot. The texture was great and the chocolate sponge base was perfect. The original recipe from Lorraine Pascal really made it easy. I had to use bananas instead of raspberries (used in the original recipe) as finding raspberries during summer in India is a mission. I also used wafers instead of chocolate cigarillos as I was short of time. You may even use kit kat for the outer layering if you want.
      Preparation
      Main Preperation Steps
      • In a separate bowl add baking powder, flour and coco powder.
      • Add two more eggs followed by the remaining flour mix and whisk until it all becomes one smooth creamy texture.
      • After preheating the oven, bake at 180 Degree Celsius / 356 degree Fahrenheit for about 35 minutes
      • Step-1

        In a mixing bowl, melt the butter slightly and add sugar. Whisk properly till the batter forms a single color smooth texture

      • Step-3

        In the first bowl (with the butter) add two eggs and whisk until mixed well.

      • Step-4

        Add half of the powdered mix from the second bowl and whisk further

        In a baking tray spread the baking paper and add flour mix to the tray

      For the cake ganache
      • Step-1

        In bowl or cake mixer add 250 grams of butter with 250 grams of icing sugar. Mix them well

      • Step-2

        Add 100 grams of melted chocolate to it and whisky until even

      Finishing the cake
      • Then cut across horizontally into two sets
      • Put a thin layer of ganache on the top and refrigerate it for 15 minutes.

        After the cake is done remove it from the baking sheet and add it to a cake table.

        Put a knife about half way up and slit the cake from the center.

      • Step-4

        Spread a layer of Ganache on the inside and apply a thick layer around the edges.

      • Step-6

        Add another layer on the outer ring and stick the waffle sticks or chocolate cigarillos if possible. I think the waffle sticks tasted a little too sweet so it is best to go with the cigarillos

      • Step-7

        Fill the top with a fruit of your choice. Lorrain even used flowers in one of her cakes. It is best to use fruits that will complement chocolate. I used bananas but you can use other fruits like raspberry, strawberries as suggested in the original recipe
