Steam cook/blanch the cauliflower until it's soft enough to mash. We did it in the MW, 5 minute intervals, thrice.. It shouldn't be too mushy, but soft enough to touch.
Once cooled, mash it, but don't make it pasty. Keep it coarse, granulated. Add the grated cheese, salt, pepper and break in the eggs.
Mix it thoroughly.
Add the flour, and coriander, and mix again. Check to see if you can bind it, when yes, make medium sized patties and shallow fry them on a medium flame.
Serve hot, with ketchup, kasundi, or your choice of dip!
