            I have always liked Chinese food, but living in India I have always found it difficult to access authentic Chinese ingredients. I have made this dish using pure veg and universally available ingredients. I somehow managed to find Chinese black fungus; you may substitute this with tofu if you want as they have a similar taste.
            Preparation
            Main Preperation Steps
            • heat a pan with about three tablespoons of olive oil while you are performing the other preparation steps.
            • First, add garlic and ginger to the pan. Saute them until brown, this may take about two-three minutes.
            • cook on low heat for two minutes before raising the heat to full again
            • Add the first sauce( mix of soya sauce, cooking wine, oyster sauce, sugar and salt) to the pan and boil it.
            • immediately add black fungus to the mix.
            • Continue heating for about 5 minutes on high heat. Then add the second sauce (made using vegetable broth powder)
            • Step-1

              Start by preparing the three different sauces mentioned in the ingredients in three separate cups. You can make them simply by mixing the relevant ingredients mentioned under the specific sauces.Stir the ingredients with a spoon and keep aside.

            • Step-2

              In a separate pan boil the black fungus quickly then remove the hard section in the middle. Chop all the Vegetables mentioned except for pea pods and keep them ready.

            • Step-5

              Now, add the pea pods as whole pieces. Just clean the roots along the edges. Simultaneously, Add the other chopped vegetables, except capsicum.

            • Step-10

              Let it cook on high heat for another 4-5 minutes.Then add capsicum.

            • Step-11

              Finally, add the third sauce(Cornflour mixed with water) and let it boil . Close the flame and let it stand for about 10 minutes before serving. This will help the cornflour to cool down and the fungus to absorb more flavor.
