Peel of as much of the skin of the tomato as you can or just use it as it is.
Cut the tomato in half and de-seed.
Chop the basil into ribbons.
In a bowl mix in all the ingredients with a drizzle of olive oil and a splash of vinegar.
Smash the garlic cloves and mix with olive oil.
Let it stand for a few minutes.
Lightly toast the bread slices on a skillet.
Brush with a generous amount of garlic oil.
Top with the tomato topping and serve.
