        Sundays are usually hectic, with cooking and stuff... Wanted to make something easy and yet tasty..Ended up with a simple mutton liver curry and Baba Ganoush, with pita bread...
        Main Preparation Steps
        • Make lengthwise slits in the brinjal, brush with oil and grill it on medium if using MW (Alternatively you can bake it for 15 mins in an oven)

        • I simply roasted it on the gas for a nice, smoky flavor

        • Peel and take out the pulp

        • Add minced garlic, salt and lemon juice, plus 2 tbsp tahini. Add 1 tbsp of Olive oil

        • Give it a good blend, but don't make it too mushy.

        Garnishing Ideas
        • Serve it with a sprinkling of chili flakes, or paprika and coriander or parsley, with a light touch of EVOO if needed.
