Make lengthwise slits in the brinjal, brush with oil and grill it on medium if using MW (Alternatively you can bake it for 15 mins in an oven)
I simply roasted it on the gas for a nice, smoky flavor
Peel and take out the pulp
Add minced garlic, salt and lemon juice, plus 2 tbsp tahini. Add 1 tbsp of Olive oil
Give it a good blend, but don't make it too mushy.
