Dice the vegetables and keep aside
in a large pan of boiling water add the noodles and let them cook for only 1 minute before turning off the heat.
Drain immediately , dry and deep fry in cooking oil of your choice.
Take about 4 to 5 tablespoons of cooking oil and add to a wok
Add garlic and ginger (finely chopped) followed by onion
Then add carrots, broccoli and baby corn. Add mushrooms at the last. Don't sautÃ© the vegetables for too long as we want them to be crisp.
Add half a cup of tomato ketchup and chili paste to a deep pot or pan.
Immediately add 1 tablespoon of vinegar and cook for 1 minute
In a cup of water mix two tablespoons of cornflour and add to the pot.
In another cup, mix two tablespoons of vegetable stock powder and add to the sauce.
Add the sauted vegetables to the sauce and take of the heat after 1 minute .
remove from heat.
Add the fried noodle nest to the center of a large plate.
pour the vegetable sauce evenly in the center from the top
add a poached egg on the top
Garnish with spring onions or roasted sesame seed if you wish.
