              American Chopsuey , an American dish with both Chinese and Italian influences, can be served as side dish or in main course . The recipe is so easy that I just had to share it.
              Main Preperation Steps
              • Dice the vegetables and keep aside

              Prepare the noodle nest
              • in a large pan of boiling water add the noodles and let them cook for only 1 minute before turning off the heat.

              • Drain immediately , dry and deep fry in cooking oil of your choice.

              • keep aside.

              Saute the vegetables
              • Take about 4 to 5 tablespoons of cooking oil and add to a wok

              • Add garlic and ginger (finely chopped) followed by onion

              • Then add carrots, broccoli and baby corn. Add mushrooms at the last. Don't sauté the vegetables for too long as we want them to be crisp.

              For the Sauce
              • Add half a cup of tomato ketchup and chili paste to a deep pot or pan.

              • Immediately add 1 tablespoon of vinegar and cook for 1 minute

              • In a cup of water mix two tablespoons of cornflour and add to the pot.

              • In another cup, mix two tablespoons of vegetable stock powder and add to the sauce.

              • Add the sauted vegetables to the sauce and take of the heat after 1 minute .

              • remove from heat.

              For the final presentation
              • Add the fried noodle nest to the center of a large plate.

              • pour the vegetable sauce evenly in the center from the top

              • add a poached egg on the top

              • Garnish with spring onions or roasted sesame seed if you wish.

              Garnishing Ideas
              • In a frying pan heat two tablespoons of cooking oil, and crack the egg in the middle to make a poached egg. I like my eggs fully done so I flipped it but most people just cook it one side. Use the poached egg to top up the American Chopsuey
